Unfortunately I do not have a video for this recipe; however, it is simple and a huge hit with my kids. I can assemble it after they go to bed and pop it in the oven on Saturday or Sunday morning.
1 Loaf of bread - my kids love cinnamon swirl or thick chocolate chip bread. Regular white works too.
12 Eggs
1 cup of fruit, (blue berries, strawberries and apples are my kids favorite.)
1 8oz block of cream cheese.
1 tablespoon vanilla extract
2 cups of milk (we use 1% in my house).
1 - large baking tray 9"x13" works.
1 - very large mixing bowl.
1 knife (for cutting bread)
1. Cut up the bread in small bit sized squares and set aside.
2. Grab the large mixing bowl
3. crack those 12 eggs and get them into the bowl. (do not put the shells in the bowl).
4. beat the eggs and then add 2 cups of milk and the tablespoon of vanilla extract
5. Mix the liquids so they are smooth flowing without clumps.
6. Add bread to mixing bowl and mix it up. Get the bread covered in the eggs/milk.
7. grease/spray your large baking tray
8. Pour roughly half of the bread/egg mixture into the tray so the bottom is covered.
9. rinse your fruit and evenly distribute it on top of the bread/egg mixture.
10. cut/square up the cream cheese and evenly distribute it on top of the bread/egg mixture.
11. Pour the rest of the bread/egg mixture into the large baking tray.
12. Refrigerate overnight
13. Pull out and bake for 45 minutes to 1 hour at 375 degrees Fahrenheit until eggs are fully cooked.
14. Cut up and serve. Pour maple syrup over it or place to the side.
I would just like to say I do know some people like 1 cup of maple syrup added to the egg mixture. It will make it sweeter as it soaks into the bread.
My kids like to add more fruit to on top of it as well. The more fruit the better.
Beer Bread! A nice hearty bread that is great for soups and chilis. It is a quick bread that can be mixed quickly in a mixer and only takes 55 minutes in the oven. It's taste can be altered easily as well.
My ingredients: 3 cups of sifted flour, 1/4 cup of sugar, 1 beer (12 oz), 1/8 cup of melted butter, 3 teaspoons of baking powder and 1 teaspoon of salt (don't bother with baking powder or salt if using self-rising flour).
Step 1: Preheat oven on to 375.
Step 2: Mix the dry ingredients together, preferably in a large size bowl. Larger the bowl, the less likely your kids will make a bigger mess for you to clean up. If they are helping you.
Step 3: Decide which beer you are going to add, crack it open and pour in it. (The beer you choose will affect flavoring and the yeast content will affect how the bread rises.
Step 4: Decide if you want to add to chocolate chips, small apple, peach or fruit pieces for an extra bit of pizazz. If your making it with your kids, then now is a great time for them to contribute
Step 5: Grease the bread pan
Step 6: Pour the dough into the pan
Step 7: Pour melted butter over top of mixture. (My boys prefer drizzling maple syrup over it as it will sweeten the bread and also gives the bread a light crunch).
Step 8: Bake for an hour
Step 9: Remove from oven and allow it to cool a bit.
Step 10: Slice it and enjoy!
This is my lazy dad recipe in spring and fall. This meal is real easy to do with a pressure and/or slow cooker. Add some vegetable oil to the pot and set to simmer. Slice up a onion and some garlic, let it sauté a bit. Then its real helpful to add frozen potatoes, vegetables and ground beef (or veggie crumblers for you vegan/vegetarians). Pour some beer that you don't want to drink over it followed it by some BBQ sauce. Pressure cook on high for 20 minutes or slow cook for the day.
If you are low on liquid in the pot, then you can always add some vegetable or beef broth if you have any. Water is also a decent substitute but it will not add flavor to it.
Add what ever seasonings you desire; however, most of the flavor will come from the beer and BBQ sauce you choose. The alcohol will burn off leaving the sugars and flavor. Resist adding additional sugar to this.
I'm being vague on how much for the ingredients, because I always just use whatever is in the freezer. Sometimes its a standard mixed bag of vegetables as in the video and sometimes it is broccoli, corn and beans.
I have had zero success with pressure cooking chicken. If you know how, then please let me know!
Have fun with this one, let the kids add in the frozen vegetables and potatoes. Let them mix it up and have some fun together. They will likely eat it even more because they helped create it.
